Do I need to treat my water at all?
Many brewers make good beer without ever adjusting water beyond removing chlorine. Dechlorinating is the one step that is nearly always worth it, because chlorine and chloramine produce a distinctly medicinal off flavour. Mineral adjustment beyond that is refinement, and it only pays off once your process is otherwise consistent.
What is the sulfate to chloride ratio supposed to do?
The convention holds that sulfate accentuates hop bitterness and makes it feel drier, while chloride emphasises malt and a fuller mouthfeel. It is a useful rule of thumb and many brewers find it holds. It is not a measured standard, so treat it as a direction to experiment in rather than a target to hit precisely.
Why is chalk not in this calculator?
Because chalk is very poorly soluble in water and mostly does not dissolve. A calculator that credited its full theoretical ion contribution would report calcium and bicarbonate that never actually entered your water, which is worse than offering nothing. If you need to raise alkalinity, baking soda genuinely dissolves and is included here.
