- Why did my mash miss the target temperature?
- The strike equation assumes the mash tun absorbs no heat, and real tuns absorb a lot. A cold cooler or kettle can pull several degrees out of the mash in the first minute. Pre-heat the tun with hot water, or measure your own loss once and add it to the strike temperature every time after that.
- Does grain temperature matter?
- Yes, more than most brewers expect. Grain stored somewhere cold can shift the required strike water temperature by several degrees, which is enough to move a beer from dry and fermentable to sweet and full bodied. Measure the grain rather than assuming it sits at room temperature.
